This recipe originally came from my Grandma LaVerne. (Random fact: My grandmas’ names are LaVerne and Shirley! I don’t think anyone else in the world can say that.)
It is a simple recipe, and it’s very good.
Ingredients:
Crust:
2 1/2 cups graham cracker crumbs
1/2 cup sugar
2/3 cup butter or margarine, melted
Filling:
4 eggs
1 cup sugar
2 teaspoons vanilla
2 (8 ounce) packages cream cheese, softened
Topping:
20 ounce can cherry pie filling
Directions:
Preheat the oven to 375 degrees. Grease a 9x13 inch pan.
Combine the graham cracker crumbs, sugar, and butter in a bowl.
Press mixture into the greased pan.
Beat the eggs with an electric mixer; then add sugar and vanilla. Cut the cream cheese into pieces and beat it in as well. Spread over the graham cracker layer.
Bake 30-35 minutes or until light brown on top and feels set. Let cool completely (preferably on wire rack).
Spread the can of cherry pie filling over the cheesecake. Store in the refrigerator.

ReplyDeleteyum! these sound beyond delicious...i always put a crazy amount of cherries on my cheesecake, so why not just combine the 2 from the start?

EEK! It looks there are little flecks of cream cheese in my egg mixture! Should I keep mixing until I reach a different consistency?
ReplyDeleteI don't think that the flecks should be a problem...They should melt in the oven. Did it turn out okay?
DeleteNo, they came out like over somethinged creme brulee! The cream cheese did not incorporate into the eggs. I'm consulting a chef friend and I want to try again!
Deletehe suggested whipping the cream cheese first, then sugar, then eggs one at a time. We'll see!!!!!!
Oh no! Yes, I would agree that whipping the cream cheese first sounds like the best improvement to the recipe. I was looking at a similar cheesecake bar recipe this morning that had you put the cream cheese, sugar, and eggs into a food processor and mix until thoroughly combined. I don't have a large enough food processor, but maybe you do?
