If you are looking for a sweet party snack, or a special treat on movie night—this recipe is for you. I have a couple aunts who make these caramel puffs, and even though I’ve had the recipe for several years, this was the first time I made them myself. And it was easy!
Ingredients:
6 ounce bag butter-flavored corn puffs (in the chips aisle)
12 large marshmallows
3/4 cup butter (1.5 sticks)
3/4 cup packed brown sugar
Directions:
Empty puffs into a large bowl. Lightly spray/”Pam” 2 large cookie sheets or jelly roll pans. Preheat oven to 250 degrees. Put the marshmallows, butter, and brown sugar in a large saucepan—melt and mix over medium-low heat.
Stir often to help it melt and to keep it from burning. Keep on heat just until it starts to boil. Pour mixture over puffs, and mix to coat well.
Spread puffs out on the 2 cookie sheets. Bake in the preheated 250 degree oven about 15-20 minutes.
While it is baking, rinse out and dry your large bowl. When puffs are done baking, put them back in the large bowl to cool completely. Stir them often to keep them from sticking together—or stir them with clean hands and sample as needed :) Store in an airtight container.
It is neat because when you first mix the melted marshmallow with the puffs, they are soft and Rice-Krispie-treat-gooey, but after baking and cooling, they become like a crunchy popcorn (and aren’t stuck together at all).
Completely addictive!
