I first shared these White Chocolate & Cranberry Oatmeal Cookies three years ago. Since they've gotten buried in the archives, I figured I'd write out the recipe again in case you're looking for a simple and delicious Christmas cookie. The tart cranberry mixed with the sweet melted chocolate make for a perfect combination.
Ingredients:
2/3 cup butter, softened
2/3 cup packed brown sugar
2 eggs
1 1/2 cups old-fashioned rolled oats
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
5 oz package dried cranberries
2/3 cup white chocolate chips
Directions:
Preheat oven to 375 degrees.
In
 a medium-sized mixing bowl, cream together the butter and brown sugar 
until light and fluffy.  Beat in the eggs one at a time, mixing well.  
Combine oats, flour, baking soda, and salt in a separate bowl.  Add to 
the butter mixture, a little bit at a time, mixing well.  Stir in the 
dried cranberries and white chocolate chips.
Drop by rounded teaspoons onto ungreased cookie sheet.  Bake for 10-12 minutes or until golden-brown.  Cool on wire racks.
Makes 2 to 3 dozen.

I don't know why I've never thought to add oatmeal to these cookies!! I'm doing that this season!! Thanks for sharing :)
