cadbury creme egg cupcakes
I was at Walmart a couple days ago in the Easter candy aisle, and I ended up with a lot of Cadbury in my cart: Cadbury Creme Eggs, Cadbury Mini Creme Eggs, Cadbury Mini Eggs (I restocked after last week’s Mini Egg Blondies), and a large Cadbury bunny. I just think Cadbury makes good chocolate ;)

I chose to use the Mini Creme Eggs to make cupcakes that I saw here.
I just ate one this afternoon, and let me tell you, it was probably the best cupcake I’ve ever had. There is a Mini Creme Egg on top of the vanilla buttercream frosting, and a Mini Creme Egg melted on the inside!



Ingredients
:

1 chocolate cake mix (I love Betty Crocker’s Super Moist Chocolate Fudge)
Eggs, Oil, and Water as the box calls for
24 cupcake liners
48 Cadbury Mini Creme Eggs (24 of them frozen so that they don’t disappear in the batter when baked)

For the buttercream frosting:
1 stick butter, softened
4 cups powdered sugar
3-4 splashes of milk
1 teaspoon vanilla extract
Yellow dye
Bags for piping (I just use Ziploc bags with their ends cut off)

Note: you could buy a can of store-bought vanilla frosting, but I don’t know how easy it would be to pipe onto the cupcake.

 
Directions:

Fill the cupcake liners 2/3 of the way full with batter. Place the egg in the center of the batter, and spread a little bit of batter over the egg.

Bake the cupcakes according to the box’s directions. Let them cool completely.

With an electric mixer, combine the butter, powdered sugar, milk, and vanilla until the frosting is the right consistency. Add more milk if it’s too thick, or more sugar if it’s too thin. Separate one cup of the frosting, and dye it yellow.

Frost the cupcakes—piping a circle of white around the outside, and a dollop of yellow frosting in the center. Place a creme egg in the center of the yellow.

  2. I LOVE Cadbury crème eggs!!! I always buy one or two at the check out stand every time I go to the store around Easter. Between you and Shay I have got to try a recipe with them. These look divine!!!
