Naomi's Zucchini Bread

I had the privilege of knowing two of my great-grandmothers for quite some time. My great-grandma Naomi was a very sweet, quiet woman, and she knew her way around a kitchen! She passed away shortly after I turned eleven, but her legacy lives on in my kitchen, my linen closet, and my heart ;)

This is her zucchini bread recipe--and since I already have nearly a dozen zucchini from my garden, I better keep up the baking!

3 1/2 cups flour
1 cup oil
2 cups sugar
3 eggs
2 cups grated zucchini
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg (optional)
2 teaspoons baking soda
1/2 teaspoon vanilla

For a mix-in, you can choose to add:
2 cups of raisins
1 cup of nuts
1-2 cups of chocolate chips
or 2 cups berries (I used fresh raspberries)

Preheat the oven for 350 degrees.

Mix sugar and oil together. Add eggs.  Mix in the zucchini. Gradually pour in the flour and spices. Add the 1/2 teaspoon of vanilla, and whatever mix-in you choose. Pour batter into two greased and floured pans. Bake for one hour, or up to 75 minutes if your pan is larger. (It's done when a toothpick or knife stuck into the center comes out clean.)  Enjoy!

These boys sure enjoyed their breakfast! (They of course chose the chocolate chip version.)

  1. Looks delicious Rachel! Can you substitute applesauce for part of the oil - a whole cup seems like a lot...

    1. Thanks! I should think that you could substitute 1/2 cup of applesauce for 1/2 cup oil, or even the full cup! :)

  2. I'd pick the chocolate chip one too. I'm a kid at heart. :) I love zucchini bread!

  3. Did you use fresh or frozen berries? Mixed or one type? Looks so yummy!!!

    1. I used fresh raspberries from my garden.
You could use frozen as well :)

  4. i need to bake this soon- yum! thanks for sharing… looks awesome

  5. I just made your chocolate zucchini bread last week! SOOOO good! Now I'll have to give this recipe a try (with chocolate chips of course)!

  6. That looks delicious! I'm going to have to try to make the chocolate chip version- I think my kids would love that for breakfast too.

  7. Best zucchini bread ever. Thanks for the recipe! ! I was gifted HUGE zucchini so I doubled the recipe and got 10 mini loaves! I am going to try zucchini muffins to freeze for back to school breakfasts. Love your blog!

Thank you so much for your comments! I enjoy reading each one!
