Every Girl Link-Up || Blackberry Lime Margarita


I am typically a hot drink kind-of-girl. I love coffee, hot chocolate, green tea, etc. But in mid-July, I can definitely appreciate an icy, fruity drink! Today, Astleigh and my Every Girl Link-Up is featuring "Cocktails and Mocktails". I prepared the Blackberry Lime Margarita as a mocktail, but I'll include how to make it non-virgin as well. The syrup is made from ripe blackberries and fresh-squeezed limes, and the flavor is amazing! It's the perfect combination of sour and sweet for a sweltering summer afternoon, or a treat after the kids go to bed :)


INGREDIENTS:  (6 servings)

For the BLACKBERRY PUREE
2 cups fresh blackberries
1/4 cup sugar
juice of 1/2 lime

For the LIME SUGAR
1/2 cup sugar
zest of 1 or 2 limes

For the MARGARITAS
1  1/4  cups Sierra Mist
juice of 1 lime
1/8 cup sugar  (2 Tablespoons)
Ice

For an alcoholic version, substitute the Sierra Mist for 1 cup tequila, and 1/4 cup Triple Sec.


DIRECTIONS:

For the puree, place the blackberries, 1/4 cup sugar, and juice of 1/2 lime in a saucepan over medium-high heat. Bring it to a boil, while stirring constantly. Reduce the heat, and let the mixture simmer for 20-25 minutes, until it thickens. 


Strain the blackberry puree through a fine-mesh strainer (or cheesecloth), pressing to get all of the liquid out into a bowl. This will remove the seeds and pulp. Refrigerate the mixture until it cools.



To make the lime sugar for the rims of the glasses, zest 1-2 limes and let the zest dry on a paper towel for 20 minutes. On a plate, mix the zest with 1/2 cup of sugar. Rub a lime wedge along the rims of the glasses, and then dip the glasses in the sugar.
 


To finish off the margaritas, fill a blender with ice. Add in the Sierra Mist, juice of 1 lime, 1/8 cup sugar, and blackberry puree. Blend slowly until it becomes the right icy texture you desire.


It's ready to serve! It's one of the prettiest and tastiest drinks I've ever had!
